Animal Style Fries Recipe

When you add caramelised onion, cheese, and a special sauce to your sweet potato fries, they become even better.

Sweet Potato Fries: – 2 large sweet potatoe – 3 Tbsp tapioca flour – 3 Tbsp avocado oil – 2 tsp sea salt – 3 slices cheese of choice or 1/2 cup grated Caramelized Onion: – 2 Tbsp avocado oil – 1 large yellow onion – ¼ tsp sea salt to taste Special Sauce: – ⅓ cup avocado oil mayonnaise – 1 Tbsp ketchup – 1 Tbsp yellow onion very finely chopped – 1 Tbsp sweet pickle relish – 1 tsp lemon juice – ¼ tsp paprika – ¼ tsp sea salt to taste

Start by making Crispy Sweet Potato Fries. Instead of sweet potato fries, you can use your favourite homemade or store-bought fry.

In a non-stick skillet, heat avocado oil on medium-high. Sauté the sliced onion for 5–8 minutes, stirring occasionally, until translucent and caramelised.

Reduce the heat to medium-low and sauté the onion for 40 minutes, stirring periodically, until thoroughly golden and caramelised.

Make the secret sauce while the onion caramelises and fries bake. Mix all the ingredients in a bowl and set aside. If you can make the sauce a day ahead, do so—it will get better!

Transfer the sweet potatoes to an oven-safe serving plate with a spatula (or keep them on the baking sheet and slide them closer together).

Use your preferred cheese and caramelised onions. Place in the hot oven (about 415 from baking the fries) for 5 minutes to melt the cheese.

Remove the plate or baking sheet from the oven and top with the special sauce. Serve on a heat-safe surface and warn guests the plate is hot!
