Arroz Con Leche (Mexican Rice Pudding) Recipe

Three-milk cake is a classic Mexican dessert. Some Mexican dishes have a dairy trinity.  

Ingredient

– 1 cup long-grain rice – 4 cups water – ¼ teaspoon salt – 2 cinnamon stick – 1 cup whole milk – 1 12-ounce can evaporated milk – 1 14-ounce can sweetened condensed milk – ½ cup raisin

The rice should be washed and then placed in a saucepan along with the water, salt, and cinnamon sticks (if using).

When the water reaches a boil, cover the pot and continue cooking.

Simmer the rice for thirty minutes, or until it reaches the desired tenderness and all of the water has been absorbed.

Simmer the rice with whole and evaporated milk for 10–15 minutes to thicken the pudding.

Add raisins and sweetened condensed milk to the rice and boil for 15 minutes. Serve hot or cold.
