Baked Blackout Doughnuts Recipe

Baked Blackout Doughnuts. Made with maple syrup, cocoa powder, a little coffee, and chocolate chips. A blackout-style doughnut needs a creamy custard-like filling. For the best chocolate doughnut, each is topped in chocolate cake crumbs. Bake them in the oven for simple, healthy eating. 

Ingredient

– 2 large eggs – 1/2 cup maple syrup – 1/2 cup milk – 2 teaspoons vanilla extract – 1 1/2 cups whole wheat pastry flour (or all purpose) – 1/2 cup unsweetened cocoa powder – 1 teaspoon instant coffee powder – 1 1/2 teaspoons baking powder – 1 teaspoon baking soda – 1/2 teaspoon kosher salt – 2 tablespoons salted butter, melted FILLING AND GLAZE – 2 cups mini chocolate chips, divided – 2 tablespoons avocado oil – 1/3 cup milk – Chocolate sprinkles or cacao chunk

Heat the oven to 350°F. Melt butter and grease a 6-cup doughnut or 12-cup muffin pan.

Mix eggs, maple syrup, milk, and vanilla in a large basin. Mix flour, cocoa powder, instant coffee powder, baking powder, baking soda, and salt until just mixed. Mix in melted butter.

Fill 1/2–2/3 of the moulds in the preheated pan with batter. Bake until barely set, 10-12 minutes. Invert the pan after 5 minutes of cooling and knife-releasing the edges.

Meanwhile, make filling. Stir 1 cup chocolate chips and oil every 30 seconds in the microwave until melted and smooth.

Like a bagel, cut the doughnut in two using a serrated knife. Spread filling on one doughnut half and sandwich the other.

Make glaze. To melt and smooth the chocolate chips and milk, stir every 30 seconds. Crumble 1-2 cooked doughnuts into a small basin.

Put sprinkles or chocolate chunks/nibs in a small basin. Dip or dip doughnuts with glaze, then invert into crumbs/sprinkles. Now enjoy!
