Baked Chocolate Fudge Glazed Doughnuts Recipe

Weekend celebration with Baked Chocolate Fudge Glazed Doughnuts. Made with maple syrup, cocoa powder, coffee, and chocolate chips. Dip in a melty chocolate sauce after baking. I love everything about these lovely, sweet doughnuts. Easy to make, better than fried doughnuts.  

Ingredient

– 2 large eggs, at room temperature – 1/2 cup maple syrup – 1/2 cup milk – 1 teaspoon vanilla extract – 1 teaspoon apple cider vinegar – 1 1/2 cups whole wheat pastry flour (or all purpose) – 1/2 cup unsweetened cocoa powder – 1 teaspoon instant coffee powder – 1 1/2 teaspoons baking powder – 1 teaspoon baking soda – 1/2 teaspoon kosher salt – 1/3 cup mini chocolate chips – 2 tablespoons salted butter, melted GLAZE – 1 cup mini chocolate chips – 2 tablespoons avocado oil – 1/3 whole milk

Heat the oven to 350°F. Melt butter and grease a 6-cup doughnut or 12-cup muffin pan.

Mix eggs, maple syrup, milk, vanilla, and vinegar in a large basin. Mix flour, cocoa powder, instant coffee powder, baking powder, baking soda, and salt until just mixed.

Stir in chocolate chunks and melted butter until blended. Fill 1/2–2/3 of the moulds in the preheated pan with batter.

Bake until barely set, 12-13 minutes. Invert the pan after 5 minutes of cooling and knife-releasing the edges.

Make the glaze. You can make one or both glazes. Glaze 1: Stir chocolate chips and oil every 30 seconds in the microwave until melted and smooth.

Glaze 2: Melt and smooth chocolate chips and milk in 30-second increments in the microwave.

Dip or drizzle doughnuts in glaze. Highly recommend eating some warm.
