Blueberry Coconut Milk Popsicles Recipe

Cool, creamy Blueberry Coconut Milk Popsicles are the easiest frozen treat! Delicious blueberry ice pops made with healthy ingredients are the perfect summer treat. 

INGREDIENT

– 4 cups fresh blueberrie – 1 (15-oz) can full-fat coconut milk – ¼ cup pure maple syrup – 1/8 tsp sea salt

Blend blueberries, coconut milk, pure maple syrup, and salt in a high-speed blender until smooth. The popsicle mixture may contain flecks of blueberry skin, but this won't affect the texture. 

Step 1

INSTRUCTIONS

Fill the popsicle mould almost to the top with blueberry mixture. Fill each hole with a wooden popsicle stick and cover the mould. 

Step 2

Popsicles should be frozen for 4–8 hours to set. Before eating a popsicle, run the outside of one or more moulds under warm water for 30 seconds. 

Step 3

Until the popsicle melts enough to loosen from the mould.  You can also thaw popsicles at room temperature to release them from the mould. 

Step 4

Enjoy these refreshing popsicles on hot summer days or whenever you want.
