Cabbage Roll Soup Recipe

Easy cabbage roll soup is a hearty weeknight meal the whole family will love! This soup version of cabbage rolls uses lean beef, yellow onion, cabbage, sodium beef broth, and uncooked rice. 

– 2 teaspoons olive oil – salt and black pepper  – 1 pound ground beef  – 1 onion  – 2 teaspoons garlic  – 4 cups green cabbage – 2 carrots  – 4 cups beef broth – 2 15 oz cans crushed tomatoes  – ½ cup uncooked long grain rice – 1 cup red bell pepper – 2 tablespoon tomato paste  – 1 teaspoon Italian herbs seasoning – 1 ½ teaspoon smoked paprika



Within a large saucepan, bring the olive oil to a temperature of medium-high. Incorporate the ground beef.

For approximately four to five minutes, cook the beef while breaking it up with a spatula until it receives a browned appearance.

After adding, cook the onion and garlic for two minutes. Add salt, black pepper, Italian seasoning, and smoked paprika.

Allow to cook for one minute while stirring to combine.Reduce the heat to a medium-low setting.

Add cabbage, carrots, beef broth, bell peppers, tomato paste, crushed tomatoes, rice, bay leaves, and brown sugar to the pot.

Once the rice is tender, cook it for 20 to 25 minutes at a simmer and taste it again for salt and pepper.

Adding an additional two cups of broth or water that has been boiled will give your soup a more liquid consistency.

Bay leaves should be removed before serving. You should serve it with sour cream and sprinkle it with parsley.
