Chickpea Broccoli Salad Recipe

Chickpea broccoli salad is a nutritious side dish made with superfoods. Have fun customising it and enjoying it in the summer. 


– 4 cups broccoli florets chopped (1 large crown broccoli) – 1 (15-oz) can chickpeas, drained and rinsed – 1/4 cup red onion finely chopped – 1 cup fresh blueberrie – 2/3 cup dried cranberries – 1/2 cup roasted sunflower seed – ⅔ cup feta cheese crumbles optional Broccoli Salad Dressing: – 1/4 cup mayonnaise – 3 Tbsp honey** – ⅓ cup fresh lemon juice*** – ¾ tsp sea salt to taste – 2 tsp poppy seeds optional


Mix dressing ingredients in a small bowl or measuring cup and reserve. Clean the broccoli crown and cut it into small florets with a sharp knife on a cutting board.  

Step 1

Place broccoli florets in a large bowl. If you like small broccoli pieces, food processor shred it. Drain chickpeas in a colander. Mix them with broccoli in the big bowl.  

Step 2

Add the remaining broccoli salad ingredients (blueberries, dried cranberries, red onion, sunflower seeds, feta). Add all the dressing to the salad bowl and mix well. 

Step 3

Add sea salt, black pepper, or fresh lemon juice to taste in the salad. A complete meal includes chickpea broccoli salad with your main course.
