Chili Mac and Cheese

Chilli Mac and Cheese is two comfort foods in one! Delicious and hearty, quick and comforting, perfect back-to-school dinner in under 30 minutes and one pot. 

– 1 tablespoon olive oil – 1 pound ground beef – 1 large onion – 3 cloves garlic – ¼ teaspoon cayenne pepper – 1 teaspoon cumin – 1 tablespoon chili powder – 1 teaspoon black pepper – 1 teaspoon salt – 1 cup black bean – 1 cup kidney bean – 26 ounces diced tomatoe – 4 cups chicken broth – 10 ounces elbow pasta – 2 cups cheddar cheese – 2 tablespoons parsley

Heat olive oil over medium-high heat in a large sauce pan or dutch oven. Cook ground beef until no longer pink.

Using extra lean ground beef doesn't require draining the fat, but if you're using fattier ground beef, do so.

Add the onion and garlic and cook for 3 minutes until the onion softens and turns translucent and the garlic is fragrant.

Stir in cayenne, cumin, chilli powder, salt, and pepper. Stir in black beans, kidney beans, tomatoes, chicken broth, and elbow pasta.

Boil everything after stirring. Reduce the heat to a simmer, cover the pot, and cook elbow macaroni for 9–12 minutes.

Add one cup of the shredded cheese and stir. Finally, top with the remaining cheddar cheese.

It's one of those dishes you won't be able to stop eating once you start, and it's such a sneaky way to sneak some veggies into your dinner.

To ensure the cheese melts, cover the pot and let it sit for about a minute. Serve with fresh parsley as a garnish.
