Chocolate Reindeer Cupcakes Recipe

Genuine Kahlua Ganache.  I enjoyed this snowy day (finally!). Light and clear skies have ruled the Colorado Rockies since November 1, when snow should be everywhere! Thus, the snowfall was nice!) While singing Christmas classics with Jingle, the family Elf on the Shelf, I remembered my botched truffle attempt. 

Ingredient

– For the Cupcakes: – 1 1/4 cups Granulated sugar – 1-3/4 cups All-purpose flour – 1 cup Cocoa – 1-1/2 teaspoons Baking powder – 1-1/2 teaspoons Baking soda – 1 teaspoon Salt – 2 Eggs room temperature – 1 cup Buttermilk room temperature – 1/2 cup Vegetable oil – 2 teaspoons Vanilla extract – 1 cup Coffee boiling hot – Whipped Chocolate Frosting: – 3 Sticks Unsalted Butter Softened – 3 cups Powdered Sugar – 3/4 cups Cocoa Powder – 2 teaspoons Vanilla Extract – 1/8 cup Milk or more – To assemble: – 24 Nilla Wafers vanilla wafer cookie – 23 Brown M&M's or brown Reese's Piece – 1 Red M&M – 48 Candy Eyes or White Chocolate Chip – 24 Pretzel Twists broken in half – 1/2 cup Chocolate Chips melted

Preheat oven to 350°F for cupcakes. Use cupcake liners. Mix sugar, flour, cocoa, baking powder, soda, and salt in large bowl.

Mix eggs, buttermilk, oil, and vanilla for 2 minutes on medium speed. Mix boiling coffee into thin batter.

Fill cups 2/3 with batter. Bake 22–25 minutes. Cool fully. Frost. For frosting, beat butter for two minutes on medium speed. Add powdered sugar and mix.

Whip cocoa powder until combined. Stir in milk and vanilla. If frosting is dark, add milk. The colour should be light brown like milk chocolate mousse. Last minute whip. Frost cupcakes.

For assembly, line a baking sheet with wax paper. Break pretzels into large antlers (I overbroke several before I got it right, so have plenty). Melt the chocolate and dip the antler tops, then set on the baking sheet and refrigerate.

Frost the cupcake generously with chocolate. Mini vanilla wafer in cupcake bottom centre. Attach the red or brown M&M to the vanilla wafer's top centre with a little icing.

After the chocolate hardens to the antlers, remove them from the fridge and place the pretzels diagonally outward or inward on the cupcake.

After placing the pretzel antlers, add the M&M or candy eyes (I put mine above the vanilla wafer snout).
