Cilantro Lime Rice Recipe 

Best rice for burrito bowls, burritos, etc. Serve this handy side dish with grilled chicken, baked salmon, Mexican, or Asian food! Tangy, herbaceous, vibrant flavours make this perfect side delicious. 

INGREDIENT

– 2 Tbsp avocado oil – 1 cup uncooked basmati white rice or long-grain white rice – 3 cloves garlic minced – 1 ½ cups water or broth – 3/4 tsp sea salt – 1 lime zested (about ½ tsp lime zest) – 2 Tbsp lime juice – 1/2 cup fresh cilantro leaves loosely packed and chopped*

INSTRUCTIONS

Place avocado oil in a medium saucepan and heat. Add uncooked white rice and mix well. Cook and stir the rice for 4–5 minutes until fragrant.  

Step 1

Brown the rice or sauté it until the grains are opaque white and fragrant, as I do. Avoid high heat because rice darkens quickly. Browning rice over medium heat takes longer, but it yields perfect texture and flavour. 

Step 2

Add the minced garlic and cook for 2 minutes until fragrant. Add sea salt and water (or chicken broth). Cover and boil the mixture.  

Step 3

Once the rice is boiling, lower the heat to the lowest setting and cook for 12 to 15 minutes, or as instructed on the package. 

Step 4

Remove the lid and fork-fluff the rice immediately after cooking. Mix in lime zest, juice, and chopped cilantro. Taste the rice and add salt, lime juice, or cilantro to taste. 

Step 5

Enjoy cilantro lime rice with your main dish! This Mexican side dish is great in burrito bowls and burritos.
