Cucumber Tomato Salad Recipe

This fresh-tasting tomato cucumber salad goes with almost any main dish! Repeat it and add different ingredients for a healthy side!


– 2 cups fresh tomatoes chopped* – 1 large cucumber thinly sliced – ½ medium-sized red onion thinly sliced – 8 ounces fresh Mozzarella cheese optional** – 3 Tbsp olive oil or avocado oil to taste – 2 Tbsp red wine vinegar*** – ½ cup fresh basil leaves thinly sliced – 1 sprig fresh dill chopped – ½ tsp sea salt to taste – ¼ tsp black pepper to taste – 2 to 3 Tbsp balsamic reduction optional


In a large bowl, mix all ingredients until well combined. No need to prepare the dressing separately from the salad; just mix everything in one bowl.

Step 1

Check the salad's flavour and add olive oil, vinegar, sea salt or black pepper. One to two tablespoons of balsamic reduction can be drizzled over the salad if you're feeling fancy.

Step 2

Serve this simple cucumber tomato salad with any main dish and enjoy! Keep cucumber tomato salad in an airtight container in the fridge for 3 days.

Step 3

Note: For best results, mix in the fresh chopped basil and mozzarella just before serving if storing the salad for more than a day. This keeps the salad fresh.
