Easy Coconut Lime Loaf Cake Recipe

– 2 cups all-purpose flour – 1 ½ teaspoon baking powder – ½ teaspoon baking soda – ½ teaspoon salt – ½ cup unsalted butter softened – ¾ cup granulated sugar – 1 teaspoon lime zest  – 2 large egg – 1 teaspoon vanilla extract – ¾ cup shredded unsweetened coconut – ¼ teaspoon coconut extract optional – ¾ cup buttermilk – 1 Tablespoon fresh lime juice

Start with a 350-degree oven. Reserve a 9" by 5" loaf pan or parchment paper with overhangs after greasing and flouring it.

Mix the dry ingredients (flour, baking powder, baking soda, salt, and coconut) in a large mixing bowl.

In another bowl, use an electric hand mixer to cream butter for 30 seconds on medium speed. You can also use a stand mixer.

In a separate bowl, muddle the sugar and lime zest until the zest releases its juices and mixes well.

Add this mixture and vanilla extract to creamed butter and beat until fluffy. After adding each egg, mix well.

Add extracts and mix well. Add three parts of dry ingredients to the butter mixture, alternating with buttermilk and lime juice.

Pour batter into pan. Bake the cake for 40–45 minutes until the top is domed, cracked, and golden brown.

To confirm, insert a toothpick into several spots in the centre. If it comes out clean, it's done.

After 10 minutes in the pan, carefully invert the cake onto a cutting board or wire rack and let it cool completely before glazing and slicing.

Sugar Lime Icing: Mix the glaze ingredients in a small bowl and drizzle over the cake. Add more lime zest.
