Easy Plum Cake Recipe

Simple pantry ingredients make a beautiful Plum Cake! In-season plums taste great in this buttery sponge cake with cinnamon and sugar.  

– 13 ounce plums  – ½ cup unsalted butter  – ¾ cup granulated sugar – 2 large eggs  – 1 cup all-purpose flour – 1 teaspoon baking powder – ½ teaspoon salt

Start with a 350-degree oven. Butter an 8-inch springform pan. Bottom parchment paper and butter edges.

A 9-inch cake pan makes flat cake, at least for me. In a medium bowl, beat butter and 1 cup sugar until light and fluffy.

An electric mixer or a wooden spoon and 3 minutes of manual effort will do the trick.

Check for full integration after adding each egg. Sift in the flour, baking powder, and salt and mix until just combined.

Put batter in pan and smooth it out. Place the halved plums cut-side up in the batter and press them with your fingers.

Mix sugar, cardamom, and cinnamon and sprinkle evenly over the cake.

Bake the cake until it turns golden brown and a toothpick or cake tester inserted into the centre comes out clean, about 50 minutes to an hour.

Before cutting, let the cake cool on a wire rack for 30 minutes. Serve warm or room temperature.

Alternately, you can store the cake in the refrigerator for the night to create a different experience; serving it cold is just as enjoyable.
