Easy Roasted Carrots and Asparagus In The Oven

Roasted carrots and asparagus will become your favourite side dish for any meal or salad. This colourful and flavorful dish is nutritious and a feast for the senses. 

1 pound asparagus 1 pound carrot 2 tablespoons olive oil or cooking oil 1 tablespoon lemon juice ½ teaspoon black pepper ½ teaspoon sea salt



Preheat oven to 400°F. Prepare asparagus by cutting and trimming the ends. Carrots should be cut like asparagus.

Line a large baking sheet with foil or parchment. A single layer of asparagus and carrots.

Salt and black pepper the veggies, then drizzle with olive oil and mix with your hands.

While veggies roast, make breadcrumbs or panko. Over medium-low heat, add butter and olive oil to a small skillet.

After butter melts, add garlic. Stir in panko or breadcrumbs and a pinch of salt after 1 minute.

Bake carrots and asparagus for 15-20 minutes. Lemon juice and fresh parsley should be added right before serving.
