Gluten Free Apple Cinnamon Bread Recipe

This apple cinnamon bread is gluten-free and sweetened with coconut sugar, resulting in a delectably moist and fluffy texture. 

Apple Cinnamon Mixture: – ½ cup coconut sugar* – 1 Tbsp ground cinnamon – 1 granny smith apple peeled, cored, and finely chopped – 1 tsp olive oil – pinch salt For the Gluten Free Bread: – ½ cup unsalted butter softened – 2/3 cup coconut sugar** – 2 tsp pure vanilla extract – 2 egg – 1½ cups gluten-free flour blend – 1½ tsp baking powder – 1 tsp kosher salt – ½ cup full-fat Greek yogurt

Start with a 350-degree oven. Prepare a 9" x 5" loaf pan with parchment or oil. Mix the apple cinnamon ingredients in a small bowl. Stir well and reserve.

Use a stand mixer or a mixing bowl to mix the butter, coconut sugar, and vanilla extract until they are well mixed.

Add eggs one at a time and stir well. Mix gluten-free flour, baking powder, and salt in a separate basin.

Add the flour mix to the bowl with the wet mix and mix just until everything is mixed together.

After you add the Greek yoghurt, mix it in until it's smooth and well mixed. It's normal for the dough to be very thick and sticky.

Cover the loaf pan with half of the bread dough.Put in two thirds of the apple cinnamon mix and use a spoon to press it into the dough.

Put in the rest of the bread dough and then the rest of the apple cinnamon filling.

Put it on the middle rack of the oven and bake for 50 minutes. Don't turn off the oven. For another 5 minutes, or until a toothpick comes out clean, leave the bread in there.

Bread should be cool for at least 20 minutes after taking it out of the oven before it can be sliced and served. Warm it up and add butter!
