Healthy Oatmeal Strawberry Banana Bread Recipe

Whole grain banana bread with berries for a healthier treat! This dairy-free, refined sugar-free banana bread recipe is easy to customise and makes a great breakfast or snack.

– 2 cups rolled oats* – 2 large ripe bananas 1 cup mashed – 2 large egg – 3 Tbsp avocado oil – 3 Tbsp pure maple syrup – 1 tsp pure vanilla extract – 2 tsp baking powder – 1 tsp sea salt – 1 ½ cups fresh strawberries chopped

Preheat oven to 350°F and line a 9" x 5" loaf pan with paper. Parchment paper removes easily. Cooking spray the bread pan instead.

Add the oats to a high-speed blender and mix for 30 seconds until flour forms.

Mash bananas in a large dish until creamy. Add eggs, avocado oil, pure maple syrup, and vanilla extract and mix well.

Mix oat flour, baking powder, and sea salt into the wet mixture. Mix everything into a thick batter.  Add chopped fresh strawberries.

Spread banana bread batter evenly in the bread pan. Sprinkle chopped strawberries on top of batter if desired.

For bread growth, cover the loaf pan with stained aluminium foil. Remove foil halfway through baking on the centre rack of the preheated oven for 60–75 minutes.

Removing the foil halfway through gives the bread a lovely golden brown top. Bread is thoroughly baked when it tests clean and reaches 190–200 degrees Fahrenheit.

Check the bread's core temperature with a digital thermometer. Use the thermometer trick to determine baking time for best results.
