Honey Glazed Spiral Ham

– 8 to 10 pound fully cooked spiral sliced ham – 1 cup light brown sugar packed – 3/4 cup honey – 2 tablespoons dijon mustard – 1 teaspoon fresh thyme

Start with a 325-degree oven. Wrap a big roasting pan in aluminium foil or use a disposable one.

Cover the ham with foil in the pan. Bake 1 hour. When 10 minutes remain, add honey, brown sugar, dijon mustard, and thyme to a medium saucepan.

Heat to a moderate simmer over medium heat. Simmer, stirring constantly, for 5 minutes to thicken the glaze.

Pull the gammon from the oven and uncover. Pour half the glaze over the gammon and separate the slices with forks or tongs.

Reassemble the slices and pour the remaining glaze over the ham.

Bake uncovered for another hour, basting the gammon every 15 minutes with pan drippings.
