Italian Minestrone Soup Recipe

Italian Minestrone Soup is hearty and full of fresh vegetables, protein-rich beans, and red lentil pasta. This soup is healthy, tasty, and suitable for many diets. 

– 3 cups vegetable broth – 1 ½ teaspoons italian seasoning – ¼ teaspoon red chili flakes or more for added spicy flavor – ½ teaspoon brown sugar – 1 ½ cup white bean – 1 can 15 oz red kidney bean – 1 cup your favorite tubular pasta – 2-3 stalks fresh celery – 2 bay leave – 1 ½ cup vegetable juice or good quality tomato juice – salt and black pepper to taste – 1 or more cups of water depending on the consistency you like – 2-3 tablespoon cooking oil

Turn on a medium dutch oven or heavy-bottom pot. Auté celery, carrots, and onion in hot oil. Salt and pepper generously.

Sauté garlic for 2-3 minutes. Continue sautéing 3 minutes. Italian seasonings, zucchini, red pepper flakes.

2 minutes sautéing. Crushed tomatoes, pasta, bay leaves, red and white beans, vegetable juice, veggie broth, and water follow.

After 8-10 minutes, pasta should be al dente. Mix fresh spinach and peas. Serve after 5-10 minutes of cooling.

Serve straight up or with fresh herbs like rosemary or basil, parmesan cheese for non-vegetarians, or nutritional yeast.
