Lemon Blueberry Bread Recipe

Lemon Blueberry Bread – 1 2/3 cup all-purpose flour 211 gram – 2 tbsp cornstarch 16 gram – 2 tsp baking powder – 1/4 tsp salt – 1 cup granulated sugar – 2 tbsp fresh lemon zest – 4 tbsp unsalted butter room temperature (56 grams) – 1/4 cup olive oil 60 ml – 3 large egg – 1/2 cup sour cream – 1/4 cup lemon juice – 1 cup blueberries fresh or frozen Lemon Cream Cheese Glaze – 1/4 cup cream cheese room temperature (56 grams) – 1 tbsp unsalted butter room temperature (14 grams) – 1/4 cup powdered sugar 31 gram – 3 tbsp lemon juice 45 ml

Blueberry-Lemon Bread Preheat oven to 350ºF. Prepare a 9x5” loaf pan with parchment and grease. Mix cornflour, baking powder, salt, and flour in a bowl. Set aside.

Place sugar and lemon zest in a large bowl. Hand-rub sugar and lemon zest. Sugar crystals extract lemon oils and flavours, making bread more lemony.

Combine butter, oil, and lemon sugar. Mix the mixture for 90 seconds with a hand or stand mixer until creamy. Mix each egg until fully incorporated before adding another. 

Step 3

Divide bowl with spatula. Stir in sour cream. Put half the flour in the bowl. Combine low. Pour lemon juice into bowl. Mix until combined. 

Step 4

Blend the batter with the remaining flour. Avoid overmixing by hand-finishing. Fill the bread loaf tin with 1/4 batter. Spread with a spatula. This prevents blueberries from sinking to the loaf bottom. 

Step 5

Add blueberries to the remaining batter gently and briefly. Add the remaining blueberry batter to the loaf pan. Spread spatula-style. 

Step 6

Bake the cake for 55–60 minutes in the preheated oven until a toothpick inserted comes out clean. 

Step 7

Cool bread in loaf pan for 20 minutes. Lift the parchment paper and place the bread on a cooling rack or plate. Cool completely before cutting. This keeps bread moist. 

Step 8

Lemon-cream cheese glaze In a bowl, beat cream cheese and butter 30 seconds. Add powdered sugar and lemon juice. Speed up and beat for another minute until creamy and fluffy after combining on low. 

Step 9

Increase powdered sugar if glaze is too thin. Thin a thick or dry glaze with a teaspoon of lemon juice. Cover bread with glaze. Bread can be decorated with blueberries and lemon zest.
