No-Bake Pumpkin Cheesecake Bars Recipe

Easy no-bake Pumpkin Cheesecake Bars have a delicate graham cracker crust and vanilla and pumpkin cheesecake layers. For the ideal fall treat, add whipped cream and cinnamon!

Crust – 16 full graham cracker sheets from about 2 sleeve – 2 tablespoons sugar – 1/2 teaspoon kosher salt – 8 tablespoons butter melted Vanilla Cheesecake – 1 cup heavy whipping cream cold – 16 ounces cream cheese softened – 1 cup powdered sugar – 1 teaspoon vanilla extract Pumpkin Cheesecake – 1/2 cup heavy whipping cream cold – 8 ounces cream cheese softened – 3/4 cup pure pumpkin purée NOT pumpkin pie filling – 1/3 cup powdered sugar – 1/4 cup brown sugar packed – 1/2 teaspoon vanilla extract – 1 1/2 teaspoons ground cinnamon – 1/2 teaspoon ground ginger – 1/4 teaspoon ground nutmeg – 1/4 teaspoon ground allspice – 1/8 teaspoon ground clove – 1/8 teaspoon kosher salt Topping – 1 cup heavy whipping cream cold – 2 tablespoons powdered sugar – 1/2 teaspoon vanilla extract – Ground cinnamon
