Peanut Butter Oatmeal Cookie Bars Recipe

The best of all worlds, these cookie bars combine chocolate chip, peanut butter and oatmeal cookies. Easy to make, flourless, dairy-free, and refined sugar-free! 


– 2 egg – 1 cup peanut butter – ⅓ cup pure maple syrup – 1 tsp vanilla extract optional – 1 ½ cups rolled oats – ¼ tsp baking soda – 1/2 tsp ground cinnamon optional – 1/2 tsp sea salt – 1 cup chocolate chips optional

Pre-heat the oven to 350°F and line an 8-inch square pan with parchment. Add eggs, peanut butter, pure maple syrup, and vanilla extract to a large bowl and mix well.

Peanut butter that is cold or firm can be microwaved for 20–30 seconds to help mix. Mix the dry ingredients—rolled oats, baking soda, ground cinnamon, and sea salt—in the bowl until a thick dough forms. 

Step 2

If adding, stir in chocolate chips. Spread peanut butter oatmeal cookie dough evenly on the baking pan. Sprinkle extra chocolate chips or flaky sea salt on top. 

Step 3

Bake the bars on the centre rack of the preheated oven for 20–25 minutes until set and slightly golden brown. Slice and serve peanut butter chocolate chip bars after 15 minutes of cooling.
