Rocky Road Pudding Parfaits Recipe

These Rocky Road Pudding Parfaits are delicious and make you feel like a kid again especially in summer. Though it's expected to snow today, I'm ready for summer and ahead of the Summit County, Colorado weather schedule. Ugh. New things.

Ingredient

CHOCOLATE PUDDING – 1/2 cup granulated sugar – 1/2 cup cocoa powder – 1/4 cup cornstarch – pinch of salt – 3 cups whole milk or canned full-fat coconut milk – 2 ounces semi-sweet or dark chocolate chopped – 3 teaspoons vanilla extract CREAM – 1 1/2 cups heavy whipping cream – 1 tablespoon powdered sugar – 2 teaspoons vanilla ROCKY ROAD – 1/2 cup roasted peanuts chopped – 1/4 cup – 1/2 cup mini marshmallow – 1/2 cup semi sweet chocolate chips –cup vanilla – Melted chocolate or hot fudge

Whisk sugar, cocoa powder, sprinkle of salt, and cornflour in a medium sauce pan. Slowly add milk and stir until smooth. Whisk constantly over medium heat to a low boil.

Allow the mixture to thicken and become pudding-like for 8-10 minutes. Stir in chopped chocolate and vanilla after removing from heat.

Scoop 3/4 cup custard into another bowl. Chill covered in the fridge. Divide remaining custard among 4-6 parfait glasses. Chill covered in the fridge.

Mix the cream in a large bowl. Whip cream until soft peaks form using an electric mixer. Beat in powdered sugar and vanilla.

Use 3/4 cup refrigerated chocolate custard. Mix custard and whipped cream. Put whipped cream in each parfait glass.

Mix peanuts, almonds, marshmallows, and chocolate chips in a bowl. Top each parfait with rocky road evenly.

Cover and chill parfaits until serving. Serve parfaits with ice cream and chocolate or fudge sauce. EAT!
