Rotini Fiorentina

This simple Rotini Fiorentina recipe takes under 30 minutes. Delicious pasta with a creamy tomato sauce and lots of mozzarella. Simple pasta dinner for busy weeknights.  

– 12 ounces Rotini  – 2 tablespoons butter – 1 tablespoon olive oil – 1 small onion – 4 cloves garlic – 2 cups tomato passata – 1 teaspoon Italian seasoning – 1 chicken bouillon cube – 1 teaspoon sugar – ½ teaspoon red pepper flake – ½ teaspoon salt – ½ teaspoon pepper – 1 cup half and half cream – 1 cup mozzarella cheese

Pasta should be cooked al dente as directed on the package. Save some of the pasta water after draining.

In the meantime, fill a large skillet with butter and olive oil, and place over medium heat.

After the butter melts, cook the onion for 3–5 minutes until softened and translucent. Add garlic and cook 30 seconds until fragrant.

Stir in the tomato passata, Italian seasoning, bouillon cube, sugar, red pepper flakes, salt, and pepper and simmer for 5 minutes.

Add cream and simmer 2–3 minutes. Add cooked pasta and mozzarella cheese and mix well.

Heat the pasta for a few minutes more. If the sauce is too thick, add some reserved pasta water.

Add some freshly grated Parmesan cheese and some parsley or basil as garnish. Serve right away.
