Rustic Apple Galette With Caramel Sauce Recipe

A buttery, flaky crust and juicy cinnamon-dusted apples make this Rustic Apple Galette recipe perfect. With melt-in-your-mouth vanilla bean ice cream and tangy caramel sauce. 

– ½ cup unsalted butter  – 1 teaspoon salt – 1 cup sour cream  – 2 cup all purpose flour – 1 tablespoon white sugar – 4 medium apples  – 2 teaspoon cornstarch – 4 tablespoon brown sugar  – 2 tablespoon unsalted butter cold – 2 teaspoon cinnamon ground – 1 egg yolk

Mix flour, sugar, and salt in a large bowl. Add very cold butter and small cubes and massage until crumbly. Add cold sour cream and stir until batter comes together.

Wrap tightly in plastic and roll each into two smaller balls. Refrigerate 45 minutes. Before removing the dough, prepare the next step.

Wet a kitchen towel and place on top. Galettes require one large baking sheet. If the oven is small, work with one ball at a time and refrigerate the other.

Taking the dough out of the fridge, discard the plastic wrap. Place balls on parchment. Spread the dough into a 10-inch circle. Dust with flour for handling.

We can hide and "even" uneven edges with our fingertips. A rustic galette, yes. Properly refrigerated dough should be easily workable.

Spread 1 tablespoon of cornflour in the centre of each galette. Layer apple slices in the centre of the galette, leaving 1 ½ to 2 inches on the outer edges for folding.

Put 1 tablespoon cold butter cubes on each galette. Fold the edges and generously brush with egg yolk.

Apply brown sugar to the galette or its edges. Bake 40–50 minutes until the edges are golden brown.

If desired, top with peach, apricot, or berry jam and serve immediately after baking. A tangy caramel sauce with vanilla bean ice cream sounds good too.
