Simple Vegan Chocolate Zucchini Bread

This delicious vegan zucchini bread is made in one bowl with nutritional grated zucchini for moisture and structure. 

– ½ cup applesauce – 1 ⅓ cup large grated zucchini  – ¾ cup brown sugar – ½ cup vegetable oil  – 1 ¼ cup all purpose flour – ⅓ cup unsweetened cocoa – 1 teaspoon baking soda – ½ cup chocolate chunks or semi sweet chocolate chips  – ¼ teaspoon kosher salt – 1 teaspoon cinnamon – 1 pinch nutmeg – 1 teaspoon vanilla extract – ¼ cup plant-based milk



Set the oven temperature to 350 degrees Fahrenheit. Line an 8.5 x 4.5 loaf pan with parchment paper to get ready.

Mix flour, cocoa powder, baking soda, and salt in a large bowl. Mix the dry ingredients well and set aside.

In order to avoid lumps in the batter, I suggest sifting the dry ingredients, particularly the cocoa powder.

Blend the sugar, oil, milk, applesauce, and vanilla thoroughly in a different medium-sized bowl.

Mix the dry and wet ingredients together. Stirring constantly, gradually add the dry mixture to the wet mixture until everything is well combined.

After preheating the loaf pan, pour the batter into it and level the top. Add extra chocolate chunks as decorations.

A toothpick inserted into the centre of the loaf should come out clean after about 50 minutes of baking in a preheated oven.

After baking, let the loaf cool in the pan before taking it out. After the loaf has cooled, slice it carefully, serve it, and enjoy every bite!
