Single-Serve Strawberry Cobbler Recipe 

One delicious strawberry cobbler for sweet fruity cravings. Make it dessert or breakfast! 

INGREDIENT

Cobbler Topping: – ¼ cup gluten-free all-purpose flour – 1 Tbsp coconut oil melted – 1 Tbsp pure maple syrup – Pinch sea salt Strawberry Filling: – 1 cup fresh strawberries chopped – 1 to 2 tsp pure maple syrup to taste – 1 tsp coconut oil melted – ½ tsp gluten-free all-purpose flour – Pinch sea salt

Heat the oven to 350°F. Wash and paper-towel-dry strawberries. The stems should be cut into small pieces. Use 1 cup fresh berries.

INSTRUCTIONS

Stir strawberry filling ingredients in an oven-safe mug, bowl, small baking dish, or ramekin. I use 8-ounce ramekins. 

Step 2

Stir together the wet and dry ingredients for the cobbler topping in a small bowl or measuring cup until a thick dough forms. 

Step 3

Put the biscuit dough in the ramekin over the strawberries. You can make biscuits or leave the dough crumbly, like me. 

Step 4

Put the ramekin on a baking sheet in case the strawberry juices overflow and bake. The topping should be golden brown and the strawberry filling bubbly after 25–28 minutes in the preheated oven. 

Step 5

Remove the cobbler from the oven and let it cool for 10 minutes before handling. Try it plain or with a scoop of vanilla ice cream, whipped cream, or Greek yoghurt.
