Spinach and Caramelized Onion Dip Recipe

Spinach & Caramelised Onion Dip is a huge hit. Serve with chips, pita, crackers, or raw veggies.

– 3 Tbsp olive oil – 2 small yellow onions finely chopped – 5 oz. baby spinach – 1 8-oz package cream cheese – 1/3 cup half-and-half or milk – 2 cloves garlic minced – 1 cup mozzarella cheese – ½ cup Parmesan cheese

Cook olive oil in a medium-sized nonstick skillet over medium-high heat. Sauté onions for 5 minutes, stirring periodically, until they sweat.

Reduce the heat to medium and stir occasionally until the onions turn deep brown, about 25 minutes.

Deglaze the pan with two tablespoons water and lower heat to medium-low. Continue cooking onions for 20 minutes until caramelised and dark brown. Keep till use.

Heat the oven to 425°F. Put spinach in a saucepan and cover. Cook 3-5 minutes over medium heat, tossing periodically, until wilted.

Add all ingredients except ½ cup of mozzarella cheese to the saucepan after cooking the spinach. Stir and heat for 5-8 minutes to blend.

Sprinkle the remaining cheese over the hot dip in a small oven-safe casserole dish.

The cheese should be golden-brown and the dip bubbling after 20–25 minutes in the preheated oven. Serve with chips and enjoy.
