Strawberry Banana Baked Oatmeal Recipe

This easy strawberry banana baked oatmeal recipe is a tasty, protein- and complex-carb breakfast that can be made ahead.

INGREDIENT

– 2 large ripe bananas mashed – 2 large egg – 1 ½ cups milk of choice* – 2 Tbsp pure maple syrup – 2 cups rolled oats – 1 tsp pure vanilla extract – ½ cup protein powder optional – ½ tsp sea salt – 2 cups ripe strawberries chopped Optional Glaze: – 1 cup powdered sugar – 2 Tbsp lemon juice or water

INSTRUCTIONS

Preheat the oven to 350 degrees F and line an 8-inch or 9-inch square baking dish with parchment paper. If parchment paper is unavailable, spray the pan with cooking spray.

Step 1

Mash bananas in a large bowl until creamy. Mix the eggs, milk, pure maple syrup, and vanilla extract until well combined. 

Step 2

Add the rolled oats, protein powder, and sea salt (dry ingredients) and mix well. Mix in chopped strawberries.

Step 3

If desired, sprinkle chopped strawberries on top of the mixture in the baking dish. Bake the muesli on the centre rack of the preheated oven for 55–65 minutes until golden brown around the edges. 

Step 4

Baked goods are done when they reach 190–200 degrees Fahrenheit. Check the doneness of baked oatmeal with an instant-read thermometer. 

Step 5

Bake a larger 9-inch pan for 45-50 minutes until the edges are golden brown. Slice and serve the baked oatmeal after it cools to room temperature.
