INGREDIENT

– 2 cups rolled oats – ⅔ cup unsweetened applesauce – 2 large egg – 3 Tbsp avocado oil – 3 Tbsp pure maple syrup – 1 tsp pure vanilla extract – 1 tsp apple cider vinegar – 2 tsp baking powder – 1/4 tsp baking soda – 1 tsp sea salt – 1 ½ cups fresh strawberries chopped

INSTRUCTIONS

Bake muffins at 350°F with paper liners. Turn oats into flour in a high-powered blender or food processor. Blend baking powder, baking soda, and sea salt for 10 seconds.

Step 1

Mix applesauce, eggs, avocado oil, pure maple syrup, vanilla extract, and cider vinegar in a large bowl. Combine dry and wet ingredients into a smooth batter.

Step 2

Mix chopped strawberries into batter. In the prepared pan, fill muffin holes ⅔ full with batter. Completely filling the holes makes 9 muffins.

Step 3

Top muffins with strawberries and oats. In the preheated oven, bake muffins on the centre rack for 38–35 minutes until clean. Bake for 30 minutes.

Step 4

The muffins are done when golden brown and a toothpick or butter knife comes out clean. Use a digital thermometer to check muffin doneness.

Step 5

Place the thermometer in the muffin centre. Baked goods are done at 190–200°F. How much batter in muffin cups determines baking time.
