Teriyaki Chicken And Cabbage Skillet Recipe

A simple, high-protein dinner with fibre and micronutrients! This simple, customisable recipe is ideal for healthy weeknight meals.

– 1 Tbsp avocado oil – 1 medium-sized yellow onion chopped – 6 to 8 cups green cabbage thinly sliced* – 1 large carrot grated – 1 red bell pepper cut into matchstick – 1 1/2 lbs boneless skinless chicken breasts chopped into bite-sized pieces** – 5 stalks green onion chopped – 1 pinch sea salt to taste Homemade Teriyaki Sauce: – 5 Tbsp liquid aminos or soy sauce*** – 1 Tbsp avocado oil – 2 Tbsp rice vinegar – 2 Tbsp pure maple syrup or honey – 4 large cloves garlic minced – 1 Tbsp fresh ginger peeled and grated – 1 Tbsp tapioca flour or cornstarch****

Mix the teriyaki sauce ingredients in a small bowl or cup. Hold until use. Skip this step with store-bought teriyaki sauce.

Step 1

In a large Dutch oven, heat avocado oil on medium-high. A deep-lip 12-inch nonstick skillet or sauté pan works too. Sauté the chopped onion for 3–4 minutes to soften.

Step 2

Top the pot or skillet with chopped cabbage, grated carrot, and bell pepper. Cook cabbage 8–10 minutes, stirring occasionally, until wilted.

Step 3

Place the vegetables to one side of the pot or skillet and add the chopped chicken and green onions. Brown the chicken away from the vegetables for 5–8 minutes, stirring occasionally.

Step 4

Cover the pot and cook the chicken for 8–15 minutes over medium high heat, stirring occasionally. Fully cooked chicken is 165 degrees F. Cooking time depends on ingredient temperature and doneness.

Step 5

Stir teriyaki sauce into the pot to coat. Keep stirring over high heat until most of the liquid evaporates.

Step 6

Add liquid aminos (soy sauce), vinegar, fresh lime juice, kosher salt, black pepper, etc. to taste. If desired, add sesame seeds and chopped green onions.

Step 7

This meal can have brown rice, cauliflower rice, or sautéed vegetables. Serve big bowls of Teriyaki Chicken and Cabbage and enjoy! Pour lime wedges and extra teriyaki sauce over the meal.
