Valentine Brownie Cupcakes with Peanut Butter Frosting Recipe

I'm not against It's lovely to make sweets and buy flowers, but it's not my favourite holiday. My dad has always dubbed Valentine's Day Hallmark. A day created by card companies to make lots of money. Definitely not a fan. 

Ingredient

– Cupcake – 1/3 cup canola oil – 1/2 cup butter melted – 4 tablespoons cocoa powder – 2 eggs – 1/2 cups sugar – 1 teaspoons vanilla – 3/4 cups flour – 1 teaspoon baking powder – 1/4 teaspoon salt – 1 cup semi-sweet chocolate chips – Frosting – 1 cup creamy peanut butter – 1 cup confectioners sugar – 5 tablespoons unsalted butter softened to room temp – 1 teaspoons vanilla extract – ¼ teaspoons salt – 2 tablespoons heavy cream

Preheat oven to 350. Line a 12-cup muffin tray with paper cups. Grease and parchment an 8-inch square pyrex dish.

Stir canola oil, butter, and chocolate until mixed. Mix eggs. Beat in sugar and vanilla. Add salt and flour. Mix in chocolate chips.

Use half the brownie batter to fill the muffin pans 3/4 full. Spoon the other half into the pyrex dish. Bake cupcakes 8-10 minutes and pan brownies 18-23 minutes.

Cool fully before icing. Remove the brownies from the pan using parchment paper and cool before cutting.

Frosting: Combine peanut butter, confectioners sugar, butter, vanilla, and salt in a stand mixer with a paddle attachment or electric handheld mixer.

Beat on high speed while slowly adding the cream until light and frothy. Take cooled brownies and cut 12 hearts with a 1" heart cookie cutter (or any other creative shape) to make cupcakes.

Frost or pipe cupcakes and add hearts. Instead of brownie hearts, make 12 cupcakes with the remaining mixture and double the icing.
